Pork Kelawin

Ingredients:

½ kl pork (face part)
½ kl pork liempo
1 ½ cup vinegar
3 tbsp soy sauce
6 medium sized tomatoes (chopped)
4 pcs chili long (green)
3 pcs chili (red)
2 tbsp. ginger (chopped)
3 large onion (red onion), chopped
1 cup cucumber (chopped)
½ cup spring Onion (chopped)
1 tbsp. ground Black Pepper
Salt to taste
1 tsp. white sugar
5 cups of water for boiling the meat
1 cup Coconut milk (optional)
4 cloves of garlic (chopped)
2 tbsp. lemon or calamansi juice

Procedure:

1. Boil the meat with salt and pepper (small amount of pepper & salt only) in 5 cups of water
2. When tender already, sliced or chopped into small pieces the pork
3. Boil the vinegar in 2 minutes. And let it cool
4. In a big bowl mix all the ingredients until all the ingredients will mixed and comes out the flavor of your taste, followed by the meat. Mixed and serve

Sometimes if I have enough time, after boiling the meat, I grilled it before I chopped. There is a different flavor if the meat is grilled. But, for me as a busy mom, boiling the meat is enough.
