Pork Kelawin

Ingredients:

½ kl pork (face part)
½ kl pork liempo
1 ½ cup vinegar
3 tbsp soy sauce
6 medium sized tomatoes (chopped)
4 pcs chili long (green)
3 pcs chili (red)
2 tbsp. ginger (chopped)
3 large onion (red onion), chopped
1 cup cucumber (chopped)
½ cup spring Onion (chopped)
1 tbsp. ground Black Pepper
Salt to taste
1 tsp. white sugar
5 cups of water for boiling the meat
1 cup Coconut milk (optional)
4 cloves of garlic (chopped)
2 tbsp. lemon or calamansi juice

Procedure:

1. Boil the meat with salt and pepper (small amount of pepper & salt only) in 5 cups of water
2. When tender already, sliced or chopped into small pieces the pork
3. Boil the vinegar in 2 minutes. And let it cool
4. In a big bowl mix all the ingredients until all the ingredients will mixed and comes out the flavor of your taste, followed by the meat. Mixed and serve

Sometimes if I have enough time, after boiling the meat, I grilled it before I chopped. There is a different flavor if the meat is grilled. But, for me as a busy mom, boiling the meat is enough.

Steamed Cream Dory Fish in Bilimbi






1 medium size Cream Dory

For Marinade:
1 medium size Cream Dory
1/8  tsp. Ground Black Pepper
1 tsp. Fish Sauce
1 tsp. Lemon
1 tsp. magic sarap
1 tbsp. Lea & Perrins Worscestershire Sauce
1 tbsp. Sliced ginger
1 tsp. Olive oil        
1 tbsp. Ginger (sliced thinly or strips)

Sauce for steaming
2cups water
¼ cup Soy Sauce
Black pepper
1 tsp. Grated Ginger

Garnish
Onion string
Bilimbini or Kamias

Procedure:

v     Clean the Cream Dory
v     Marinate for 5minutes to black pepper, fish sauce, lemon, magic sarap, and Lea & Perrins Worcestershire            
v     Place the sauce for steaming to the steamer  (water , soy sauce, Black pepper, Grated Ginger)
v     Placed the marinated Cream Dory to microwable plate together with the Bilimbini and the steam of onion string and strips ginger.
v     Place the plate w/ the Cream Dory in the steamer and steam for 15mins
v     Serve with rice
